I love to cook. It is fun for me to create my own recipes and play around in the kitchen. I love Mexican food, but the calories that come with it….not so much.
The below recipe is one of my favorite dishes to cook up when I am craving Mexican food. It is extremely easy and fit friendly. It includes protein, healthy fats, and complex carbs.
- 2 cups shredded cooked chicken breast
- 1 cup sliced onion
- 5 garlic cloves (minced)
- 1 can black beans, rinsed and drained
- 1 cup fat-free, less-sodium chicken broth
- 1 can salsa de chile fresco
- 15 (6-inch) whole wheat tortillas, cut into 1-inch strips
- 1 cup shredded queso blanco (4 ounces)

Preheat oven to 450°.
Heat a large skillet over medium-high heat. Coat pan with cooking spray. Sauté sliced onions until lightly browned. Add garlic; sauté 1 minute. Add chicken; cook 30 seconds. Transfer mixture to a bowl then stir in beans. Add the broth and salsa to pan bringing it to a boil. Reduce heat, and simmer 5 minutes, stirring occasionally - Set aside.
Place half of the pre cut tortilla strips in bottom of an 11 x 7-inch baking dish coated with cooking spray. Pour half of chicken mixture over tortillas. Top with remaining tortillas and chicken mixture and pour broth mixture evenly over chicken mixture. Sprinkle with cheese.
Bake at 450° for 10 minutes or until tortillas are lightly browned and cheese is melted.
