As an early Thanksgiving treat, I’m gonna show you a fun recipe that tastes so good you’ll forget it’s actually good for you. These low carb protein pumpkin muffins only take about 20 total minutes to make and require almost zero cooking skills!

Ingredients:

Step 1: Preheat & Prepare
Preheat an oven to 350F and spray 8 slots in a muffin tin with nonstick cooking spray or place 8 silicone muffin molds on a baking sheet.

Step 2: Mix your Ingredients
Mix the dry ingredients together in a large bowl. Gradually stir in the eggs, canned pumpkin, and vanilla extract. Stir until you have an evenly mixed batter.

Step 3: Add Mix to Muffin Tray
Spoon the batter into the muffin tin or molds, filling each mold about 3/4 full.

Step 4: Bake & Enjoy
Bake for 20-22 minutes or until the muffins are cooked through and the tops are golden brown. Transfer the muffins to a wire rack to cool and enjoy.

These muffins can be eaten for dessert, as a snack, and as a quick but filling breakfast option! Whether your busy getting ready for Thanksgiving or on the go with family these muffins are protein-packed and make a perfect on the go breakfast treat the whole family will enjoy.
